ww mini chicken pot pies
i love chicken pot pie. i just don't like the calories and fat that go along with it. so when i saw a recipe for these mini chicken pot pies they were a must try. on my mission to loss the weight i gained when i was pregnant, i am always on the look out for a new recipe that is healthy yet tasty. not all recipes have been winners, but i have to say this one was.
i have now made this recipe twice. yes, twice and i only found it last month. it is so delicious. you would never know this was a lighter version.even my husband enjoyed it. he could not believe it was recipe i found in the weight watchers magazine.
what i love the most is that it takes the guess work out of the portion size. each pot pie is in it own 8 oz ramekin. i only eat one ramekin which is about 7 ww point plus value, my husband eats two. i make these on a sunday and have them for lunch throughout the week. i prefer them heated in the oven, but i am sure they could be heated in the microwave as well. i just prefer the oven over the microwave.
i cheat a bit and use a store rotisserie chicken. just one breast from the rotisserie works perfectly in this recipe. i then use the rest of the chicken in another recipe to make tacos and homemade chicken soup.
